Cookie Cake
What better way to celebrate any occasion than with a cookie cake! We've added white chocolate chips and plenty of sprinkles to make this one! Topped with icing and more whipped cream and it's a party in your mouth!

Ingredients
1/2 cup butter softened
3/4 cup granulated sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cornstarch
1/4 cup white chocolate chips
1/2 cup sprinkles
Icing:
1 1/2 cups sifted confectioners sugar
1/2 cup (1 stick) softened butter
1/2 teaspoon vanilla extract
1 tablespoon heavy cream
Recipe Instructions
Preheat oven to 350 degrees. Whisk together the flour, salt, baking powder, baking soda, and cornstarch. Set aside. In a separate bowl, cream together the butter and sugar on medium high speed. Add egg and egg yolk, mix well. Add vanilla and mix well. On low speed, add dry ingredients to butter mixture. Stir in the white chocolate chips and sprinkles. Dough will be stiff. Press dough into 9" round USA Pan. Bake for 25-30 minutes and then remove to cooling rack. Cool completely. ICING: Cream together butter and confectioners sugar. Add in the vanilla and heavy cream. Pipe frosting around edge of cake, or just ice the whole cake. Sprinkle with extra sprinkles if desired.
