Vanilla Chip Fruit Pizza
This fresh, light vanilla chip fruit tart is the perfect dessert for your summer festivities! A cookie crust with a delicious vanilla filling, all topped with delicious fresh fruit and a sweet glaze!

Ingredients
Crust:
3/4 cup softened butter
1/2 cup confectioners sugar
1 1/2 cups flour
Vanilla Filling:
1 2/3 cups vanilla chips
1/4 cup heavy cream
1 8 oz package softened cream cheese
Fruit Topping:
2-3 cups sliced fruit- we've used strawberries, kiwi, mandarin oranges, blueberries, & raspberries
Fruit Glaze:
1/4 cup granulated sugar
1 teaspoon cornstarch
1/2 cup pineapple juice
1/2 Tablespoon lemon juice
Recipe Instructions
Preheat oven to 300 degrees. Beat butter and sugar until light and fluffy. Add in the flour and mix until just combined. Press dough into the bottom of your USA Pan 14" pizza pan. Bake for 20 minutes until lightly browned. Cool completely. Heat heavy cream until very hot and then pour over the vanilla chips. Let sit for 1-2 minutes and then stir until chips are completely melted. Beat in the cream cheese. Spread over the cooled crust. Arrange sliced fruit on top of the filling. For the glaze, in a small saucepan, combine the sugar and cornstarch and then stir in juices. Cook over medium heat, stirring until thickened. Remove from heat and then cool completely. Drizzle/spread on top of fruit. Refrigerate fruit pizza until ready to serve, or at least one hour. ENJOY!!
