Peppermint Cookies
These white chocolate peppermint cookies are the perfect addition to your holiday cookie table! So festive with the peppermint candies mixed in, and the vanilla pudding makes these super moist and delicious!

3/4 cup unsalted butter, softened
1 cup sugar
1 small package vanilla pudding (3.4 oz)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
2 1/4 cups all purpose flour
1 cup white chocolate chips
1 cup crushed peppermints or candy canes
Recipe Instructions
Preheat oven to 350 degrees. In a large bowl, or the bowl of your stand mixer, cream together the butter and sugar until well mixed. Next, beat in the vanilla pudding. Add the eggs and vanilla extract and mix well. Add in the baking soda and flour and mix until just combined. Stir in the white chocolate chips and the crushed peppermint candy. Roll dough into 1" balls and place onto your favorite USA Pan cookie sheet or half sheet pan. Leave about 1-2" between cookies. Bake for 8-10 minutes. Remove from oven to cool for a few minutes on cooling rack and then remove cookies from cookie sheet to cool completely. ENJOY!
