Chocolate Rudolph Cupcakes
These chocolate cupcakes with chocolate ganache are perfect any time of year! By adding the mini pretzels, red candies, and the candy eyeballs gives you a fun festive treat for Christmas time! 2 cups all-purpose flour1 tsp. baking soda
1/2 tsp. salt
1/2 cup unsweetened cocoa powder (preferably Dutch-processed)
2/3 cup softened butter
1 tsp. vanilla extract
1 1/2 cups of sugar
3 eggs
1 cup of milk
Optional for Rudolph cupcakes:
mini pretzels
red candies
candy eyeballs
Ganache:
6 oz. semi sweet chocolate chips
1/3 cup heavy cream
1 Tbsp. granulated sugar
1 1/2 Tbsp. butter
Recipe Instructions
Preheat your oven to 350 degrees. In a large bowl, mix the flour, baking soda, salt, and unsweetened cocoa powder. Set aside. In a large mixing bowl, cream together the butter and sugar. Add in the eggs and vanilla extract and mix. With mixer on low, alternate adding the dry ingredients and milk, stirring after each addition. Fill the wells of your USA PAN 12 cup Muffin Pan 2/3 full of batter. Bake for 25 minutes, until cupcakes are set. Cool for 10 minutes in the pan and then remove to cooling rack to cool completely. For the ganache, place all the ingredients in a saucepan over medium-low heat. Stir constantly and once everything is almost melted, pull from the heat. Keep stirring until everything is melted and shiny. Let it sit for a few minutes and stir again. Dip the tips of the cupcakes in the ganache or use a knife to ice them. Optional: For Rudolph cupcakes, use 2 mini pretzels for ears, a red candy for the nose, and candy eyeballs. ENJOY!
