Banana Walnut Mini Loaves
What's better than a loaf of delicious, moist banana bread? How about banana walnut mini loaves!! These mini loaves are so cute, so delicious, and so perfect for sharing! We like to toast our walnuts for an even better nutty flavor!

Ingredients
1/2 cup unsalted butter, softened to room temp
1 cup granulated sugar
2 eggs, lightly beaten
4 bananas, mashed
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts- toasted
Recipe Instructions
Preheat oven to 350 degrees. Place walnuts on your USA Pan quarter sheet pan and roast for about 8-10 minutes, until fragrant. Cool nuts and then chop. Sift together the flour, baking soda, and salt and set aside. In a large bowl, cream together your butter and sugar. Once mixed well, add in the eggs, vanilla, and mashed banana. Combine well. Mix in the dry ingredients until just combined. Stir in 1 cup of chopped walnuts. Divide batter among the wells of your USA Pan mini loaf pan. Bake in preheated oven for approximately 20-25 minutes, until the batter is no longer wet and bread is cooked through. Remove from oven to cooling rack. Once cooled, remove from pan. ENJOY!!
