Banana Bread
Moist, delicous, and loaded with banana flavor. Banana bread is always a favorite. These were made in our mini loaf pan, perfect for gift giving, it makes the cutest little loaves!

Ingredients
1 1/12 cup all purpose flour1 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 teaspoon ground cinnamon
3 medium bananas (over ripe, even black bananas are best)
1/2 cup (1 stick) melted butter, cooled
3/4 cup brown sugar
2 large eggs lightly beaten
1 teaspoon vanilla extract
1/2 cup toasted chopped nuts (walnuts/pecans) optional
Recipe Instructions
Whisk flour, baking soda, salt, and cinnamon together and set aside. Mash bananas in a large bowl into a chunky paste. Add in the melted butter, brown sugar, eggs, and vanilla. Add in the dry ingredients gradually. Do not over mix. Just stir until blended. Divide batter equally in the 8 wells of the mini loaf pan. You could also use a large loaf pan, but baking time would need adjusted. Bake for 20-25 min or until knife inserted into center of one loaf comes out clean. Cool in pan and then remove when cooled.
