Apple Cinnamon Muffins
Our Texas Muffin Pan makes great, big hearty muffins. We love these apple cinnamon ones, with the crunchy crumble topping!

Ingredients
2 cups peeled, chopped applesCrumble Topping:
1/4 cup brown sugar
3 tablespoons flour
1/4 teaspoon cinnamon
2 tablespoons unsalted butter
Muffins:
2 cups flour
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
3/4 cup brown sugar
1/4 cup sugar
Recipe Instructions
Mix crumble topping ingredients and then work in butter until crumbly. Set aside. Mix flour, cinnamon, allspice, nutmeg, ground cloves, salt, baking powder, and baking soda together and set aside. In a separate bowl, whisk together eggs, vegetable oil, vanilla, brown sugar, and sugar until smooth. Pour wet ingredients into dry ingredients and mix until incorporated. Stir in apples. Divide batter evenly between the 6 wells of our Texas Muffin Pan. An ice cream scoop works perfectly here. Sprinkle crumble topping over each muffin. No need to grease or spray pan. Bake at 350 degrees for about 30-35 minutes. Toothpick inserted will come out mostly clean, as muffins will continue to set up after they come out of oven. Cool on cooling rack. Remove from muffin pan
